| Brad Johnstone - Owner/Manager (LAURIETON)
Brad Johnstone started his cooking career in Port macquarie 15 years ago, and soon moved to Sydney to work in fine dining restaurants for a number of years.
Opportunities arose to start working in Cafe’s in inner Sydney Newtown, amongst the ecclectic mix of people buzzing around, including being involved in the start up of a number of restaurants.
A 3 year stint in London's west end in Marylabone, added to the style content and standards seen in The Village Cafe Restaurants today.

| Dave Johnstone - Owner/Manager (PORT MACQUARIE)
Dave Johnstone grew up in Port Macquarie and began working in hospitality as an after-school job in 1984, working in several of Port’s highest profile restaurants at that time (some of which still are!). During a 17 year ‘stint’ in Sydney from 1989 Dave worked in a variety of positions in a number of professions – from banking to the entertainment industry – but consistently maintained a role in hospitality, working in all roles from dishwasher to manager.
Dave co-owned /managed a café in Sydney’s inner west suburb of Newtown, has worked in major function centres in Bankstown and Darling Harbour and in a variety of restaurants from fine dining to American pizza chains. His passion is service and his motto is “nunquam non paratus” (never unprepared)

| Scott Deutscher (PORT MACQUARIE)
| Scott has been head chef at Port Village since August 2007. He brings an extensive knowledge of the industry, gained over 25 years, from Sydney & abroad |

| Luke Windus (PORT MACQUARIE)
| Luke started his apprenticeship at Port Village in 2005 & helped establish the Laurieton restaurant when it opened in 2007, before leaving to gain valuable experience while finishing his training at a variety of other restaurants in 2008/2009. Luke has come back to Village this year (2009) with many new & invigorating ideas |

| Alexandra (Alex) Simmonds - waitress/hostess (PORT MACQUARIE)
| Over the last 6 months Alex has completed her certificate 2 in hospitality at Village and will join us as a permanent staff member from 2010 |

| Dylan (The Hoff) - kitchen hand (PORT MACQUARIE)
| Dylan has been at Village for 2 years & works in the kitchen & on outcatering jobs. Dylan will complete his HSC in 2010 |

| Rhiannon (Rhian) Simmonds - Waitress (PORT MACQUARIE)
| Village was lucky enough to catch Rhian this year as she took a step away from retail management |

| Giorgia joined the Village front of house team this year (we didnt steal her from another restaurant - honestly!) & will complete her HSC in 2010 |
